Interview: Vox Chef Aaron on his passion for innovation at the venue

With previous experience working for Executive Head Chef Jason Atherton at Maze in London, a Michelin star restaurant, and at the Vox’s sister venue the ICC, Senior Head Chef Aaron Johnson-Waters and his team are pushing the boundaries of conference hospitality. With individual menu packs and bespoke offerings, including a new online menu selector, Aaron has created a unique identity for the venue and is delighting customers.

The Vox opened in 2015 as a forward thinking and highly creative conference venue accommodating up to 900 delegates. Situated within the £150 million integrated leisure and entertainment destination Resorts World Birmingham on the NEC Campus – the first destination of its kind in the UK – its layout provides a flexible conference and banqueting space through retractable and soundproof skyfold walls.

 

 

 

Not only are its facilities setting new standards in the conference sector but its food and beverage offer is attracting both new and repeat custom.

 

“We have been building a reputation since day one and delivering a quality food offer to exceed customer expectations,” says Aaron. “We ensure the food is innovative and current and this is enhanced by first class service.”

Aaron feels incredibly fortunate to be able to craft his own food story at this leading venue, writing all the recipes and placing his own spin on the dishes.

“We are also fortunate to have an incredible Front of House team at the Vox,” he says. “Led by General Manager Mark Charlampowicz, we both love to keep things fresh and he is just as passionate as me when it comes to the customer experience.

“We hold events which include street food offers and go beyond the traditional dish. One day we’ll be offering a circus themed menu and the next, a feast of sweet treats for event attendees. I work closely with the Front of House team to ensure they know exactly what everything is and why it’s displayed in a certain way. I then place a chef behind the station, so they can inform the guest and bring more theatre to the experience. If your heart and soul goes into something, you do need that interaction with the customers.”

Online menu selector


Amadeus has created a bespoke online menu selector for the Vox Conference Venue’s website. The online tool is designed to help organisers build the perfect menu to enhance their event. Originally introduced in 2018 at sister venue the ICC, it is now on the Vox’s website, part of a project to improve navigation and its user experience.
